How Mayura grades: AUS-MEAT marble scores, MIJ camera assessment, and the Australian record MIJ MS of 22.5.
Marbling — the fine, even intramuscular fat that defines Wagyu — is measured, not estimated.

Mayura’s cattle consistently achieve high marbling scores — typically 7–9+ on the Australian (AUS-MEAT) grading scale, equivalent to high-end Japanese A4–A5 grades.
Each animal is graded independently by an AUS-MEAT approved grader. To go further, a second tool is used: digital camera image assessment with Meat Image Japan (MIJ), analysed with AI to provide marble scores beyond AUS-MEAT Marble Score 9. Mayura holds the Australian record for the highest MIJ MS, at 22.5.
Scoring consistency matters as much as high scores. Mayura’s breeding and feeding programmes produce remarkably uniform results, with cattle clustering tightly around their target specifications — you are not receiving marble score 9 in one shipment and 6 in the next. This uniformity extends across the carcass, so secondary cuts are genuinely premium products in their own right.
