Full-Blood Wagyu refers to beef from cattle that show no evidence of cross-breeding, whose pedigree can be traced back to Japan. Mayura Station specialises in it exclusively — animals that are 100% genetically pure Wagyu.

This distinction matters more than many realise. Much of the Wagyu marketed globally is actually crossbred — typically Wagyu crossed with Angus or other breeds. While crossbreeding can produce good beef, it is subject to a variability that makes delivering consistency a challenge. Full-Blood Wagyu, by contrast, offers genetic foundations that let us fine-tune every single aspect of the raising process.

Our herd descends from some of Japan’s most prestigious bloodlines, selected over generations to optimise marbling capacity, meat quality and the cattle’s ability to thrive in Australian conditions.

Genetics alone don’t guarantee quality — two Wagyu steaks can differ as dramatically as a mass-produced wine differs from a carefully crafted vintage. But a pure genetic foundation, coupled with Mayura’s farming practices, is what guarantees supreme and unparalleled consistency across every carcass.

A healthier composition

A fat profile like no other beef

Full-Blood Wagyu has a unique fat composition, with a ratio of monounsaturated to saturated fat of roughly 2:1 — a marked contrast to the majority of Australian beef, which sits closer to 1:1. Those monounsaturated fats are rich in the “good” fats also found in olive oil and avocados, and carry high levels of both omega-6 and omega-3.

The result is a lower melting point, so the fat begins to dissolve at a lower temperature — creating the luxurious, almost buttery texture Mayura beef is known for, and a flavour profile with a sweetness and depth that sets it apart from standard grain-finished Wagyu.
