Established in 1997 with the importation of some of Australia’s first live 100% Full-Blood Wagyu, Mayura Station is home to one of the world’s most elite breeding operations. Decades of performance breeding have identified superior lines and established us in South Australia as the epicentre of outstanding Wagyu genetics outside Japan.
The consistency of our beef begins here. Every animal in the programme descends from known bloodlines with documented performance characteristics — because you cannot achieve consistent outcomes without consistent starting material.

A breeding philosophy built on records
With structured breeding programs and consistent selection pressure, we push the boundaries of what can be achieved — always with our eyes on the future.
Our performance-breeding strategy is backed by record keeping from our Full-Blood breeding and feeding operations, and by carcass data captured at chiller assessment by AUS-MEAT and the MIJ digital camera. The aim: Full-Blood Wagyu with exceptional marbling and large ribeyes, reaching a target weight of 450 kg at 24 months of age — early-maturing, profitable through the supply chain, and able to perform in any environment.
Mayura Itoshigenami JNR — our foundation sire
A once-in-a-generation sire and the backbone of our branded beef operation, fathering around 40% of our calves each year.
With more than 1,000 carcasses recorded, Junior is the best carcass sire used in the Mayura branded beef operation — consistently grading AUS-MEAT 9+, with herd-leading eye muscle and carcass weight at a young age. His continually excellent performance is reflected in the accuracy of his Estimated Breeding Values, and he is the benchmark against which we progeny-test to discover our next generation of sires.
Sire catalogue
A selection of the sires at the heart of the Mayura programme, with their Estimated Breeding Values (EBVs) for marble score (MS), eye-muscle area (EMA) and carcass weight (CWT). EBVs describe an animal’s genetic merit for a trait relative to the breed — the higher the value, the stronger the expected contribution to its progeny.

Mayura Jackpot — a son of Itoshigenami JNR — sired the 2019 Grand Champion at the Australian Wagyu Association Branded Beef Awards and currently holds the number-one spot for marbling at Mayura. Herald descends from Suzutani, one of the most genetically influential cows ever to leave Japan.
