A two-stage programme that makes the difference
Perhaps nothing distinguishes Mayura more dramatically than its proprietary feeding programme — a two-stage operation delivering specially formulated rations that ensure an unparalleled flavour profile, tenderness, succulent juiciness and silky mouth feel.
Calves are taken off the milk at six months old, then spend some 500 days on background feeding and finishing. A dedicated cropping operation at Mayura Station supplies high-quality grain and fodder into our breeding and feeding divisions, so the feed itself never varies — no seasonal substitution, no batch-to-batch inconsistency.
Stage one — range feeding
Raised on limestone hills
The cattle are fed specially formulated diets and roam in 10,000 m² cells, moved from one to the next to let the pasture rest. These cells are all strategically placed on limestone hills, guaranteeing the animals receive their calcium requirements naturally during their period of highest need.

Stage two — barn finishing
The ‘Mayura Moo Cow Motel’
Stage two is barn-sheltered feeding in what is affectionately known as the ‘Mayura Moo Cow Motel’ — a five-star finishing establishment, a large barn furnished with sawdust floors that provides the ultimate in animal comfort. Here the animals are fed a traditional slow-growth diet that improves meat texture. The beef is HGP free and antibiotic free.

A chocolate-supplemented ration
While many Wagyu producers rely on grain-finishing, Mayura takes the concept significantly further with its signature chocolate-supplemented feed.

Why chocolate
Not a gimmick — chemistry
The practice has solid reasoning behind it: the chocolate is rich in beneficial compounds and healthy fats that influence the development and composition of the cattle’s intramuscular fat. The result is beef with exceptionally high levels of monounsaturated fats — the “good” fats also found in olive oil and avocados.
This higher content of oleic acid gives the beef a lower melting point, so the fat begins to dissolve at a lower temperature — creating a luxurious, almost buttery texture, and a flavour that is more complex and layered, with a subtle sweetness that sets it apart from standard grain-finished Wagyu.

A dedicated cropping operation supplies high-quality grain and fodder into our Wagyu breeding and feeding divisions. The use of composted materials alongside traditional farming methods forms the backbone of a sustainable operation, and our rotational cropping program grows cereals, wheat, oats, legumes, broad beans, clover, lucerne, ryegrass and maize. Mayura incorporates its chocolate mix with essential vitamins and minerals in precise ratios, so that every animal, every day, receives identical nutrition.
