In an industry where variables change at every stage — breeding, weather, processing — achieving reliable, continually consistent quality is extraordinarily difficult. This is precisely where Mayura excels.

Every animal is raised under the same exacting protocols. Feed composition remains constant. Nutrition is managed from conception through to harvest — considerably longer than many Wagyu producers — ensuring full development of marbling and flavour. Processing occurs at G & K O’Connor, where every aspect of handling, aging and cutting is managed under the watchful eyes of passionate experts. This vertical integration eliminates the quality drift that occurs when multiple parties handle a product.

Marbling scores and grading consistency

Mayura’s cattle consistently achieve high marbling scores — but scoring consistency matters as much as high scores. You are not receiving marble score 9 in one shipment and 6 in the next; our cattle cluster tightly around their target specifications, so eating experiences are predictable regardless of when the product is ordered. Each animal is graded independently by an AUS-MEAT approved grader, and a second tool — digital camera image assessment with Meat Image Japan (MIJ), read with AI — provides marble scores beyond AUS-MEAT Marble Score 9.

This uniformity extends across the carcass. In lesser Wagyu, you might find spectacular marbling in the ribeye while the sirloin or chuck shows significantly less. Mayura’s extended feeding period and genetic selection produce cattle where marbling distributes more evenly — which is crucial for maintaining quality across 32 cuts, so secondary cuts are genuinely premium products in their own right.

Quality control and inspection

At every stage, Mayura implements rigorous quality control. Animals are monitored throughout their lives for health, growth rates and condition; any animal not meeting standards is culled from the programme rather than allowed to compromise the brand. Post-slaughter, every carcass undergoes detailed inspection and grading — evaluated for marbling distribution, colour, texture and fat quality. Only products meeting Mayura’s standards receive the label, and those standards are non-negotiable regardless of market demand.

Consistency also requires human expertise. Mayura invests heavily in staff training, ensuring butchers understand not just how to break down carcasses, but why specific cutting techniques matter for different applications — from grain direction for an Italian tagliata to the traditional cut for Korean galbi. Long-term staff retention preserves this institutional knowledge.

Documentation and traceability

Mayura offers complete traceability from birth to plate. State-of-the-art data systems track every animal from birth through processing. If a customer ever reports a quality concern, we can pull the complete records for that specific animal, determine whether the issue reflects a systemic problem or an anomaly, and respond appropriately — a level of traceability that is rare in agriculture.
