The Mayura difference
In the world of premium beef, few names command the respect of Mayura Station. As Wagyu has become ubiquitous — sometimes to the point where the term risks losing meaning — we have built our reputation on something increasingly rare: faultless consistency and exceptional quality.
Genetics alone don’t guarantee quality. Two Wagyu steaks can differ as dramatically as a mass-produced wine differs from a carefully crafted vintage. Breeding, feeding, stress management and processing all shape the final product — and it is here, through measurable and consistent results, that Mayura distinguishes itself.

The Full-Blood advantage
Mayura specialises in Full-Blood Wagyu — animals that are 100% genetically pure, fully traceable to their original Japanese bloodlines. Much of the Wagyu marketed globally is, by contrast, crossbred.
Our herd descends from some of Japan’s most prestigious bloodlines, with meticulous selection over generations to optimise marbling capacity, meat quality and the cattle’s ability to thrive in Australian conditions. This genetic foundation is what allows every other aspect of the raising process to be fine-tuned — and what guarantees unparalleled consistency.

The feeding program that makes the difference
Perhaps nothing distinguishes Mayura more dramatically than its proprietary feeding program. Cattle are taken off milk at six months, then spend some 500 days on carefully formulated background and finishing rations. Stage two is barn-sheltered feeding in what is affectionately known as the “Mayura Moo Cow Motel” — a five-star finishing establishment furnished with sawdust floors for the ultimate in animal comfort.
While many Wagyu producers rely on grain finishing, Mayura takes the concept further with its signature chocolate-supplemented feed. The chocolate is rich in beneficial compounds and healthy fats that influence the development of the cattle’s intramuscular fat, producing beef with exceptionally high levels of the “good” monounsaturated fats also found in olive oil and avocados. The result is a lower melting point, a luxurious buttery texture and a flavour that is complex, layered and subtly sweet.

Feed formulation never varies. There is no seasonal substitution, no batch-to-batch inconsistency — every animal is raised under the same exacting protocols, from conception through to harvest. Cattle consistently achieve high marbling scores, and Mayura holds the Australian record for the highest Meat Image Japan marble score, at 22.5. From breeding to feeding to full traceability, this uncompromising approach is what turns an already prestigious product into something exceptional.
